Ingredients
• 3 medium potatoes (about 500 g), peeled and cut into strips
• 2 medium onions, thinly sliced
• 10–12 cashews
• 1 tbsp ginger-garlic paste
• ½ cup plain curd (yogurt)
• 2–3 tbsp oil (plus oil for deep frying the onions)
• 1 tsp salt (or to taste)
• 1 tsp coriander powder
• 1 tsp red chilli powder
• ¼ tsp turmeric powder
• ½–1 cup water (if needed)
•Fresh coriander, chopped (for garnish)
Method
1. Peel the potatoes and cut them into thin strips. Rinse and pat them dry.
2. Heat enough oil for deep frying. Deep-fry the sliced onions until they turn golden brown and crispy. Remove and drain on a paper towel. Let them cool completely.
3. In a blender, add the deep-fried onions, cashews, ginger-garlic paste, and curd. Blend into a smooth, creamy paste. If needed, add 2–3 tbsp water to help blend.
4. Heat 2–3 tbsp oil in a pan over medium heat. Add the potato strips and sauté for 5–7 minutes.
5. Add the salt, coriander powder, red chilli powder, and turmeric. Mix well so the potatoes are evenly coated with the spices.
6. Add the prepared onion-cashew-curd paste and mix well. Cook for 3–4 minutes, stirring occasionally.
7. Check the consistency. If the gravy is too thick, add ½–1 cup water and stir well.
8. Cover and cook on low heat for 8–10 minutes, or until the potatoes are tender and the gravy is creamy.
9. Garnish with chopped fresh coriander and serve hot.
Serving Suggestions
Serve hot with butter naan, roti, paratha, jeera rice, or steamed rice. Add cucumber raita, sliced onions, lemon wedges, or papad on the side for a complete meal.
