- Rich in protein from paneer and mushrooms.
- Fresh coriander root adds a unique aromatic flavor.
- Mildly spiced and perfect for everyday meals.
- Quick and easy to prepare in about 30 minutes.
Ingredients
• 200 g paneer, cubed (reserve a few cubes for the gravy if
desired)
• 1 medium yellow capsicum, roughly chopped
• 1 medium coriander root (or 2–3 tbsp coriander stems with
a handful of coriander leaves), chopped
• 1½ tbsp cooking oil
• 4–5 garlic cloves, finely chopped
• 200 g mushrooms, sliced
• ½ tsp turmeric powder
• 1 tsp coriander powder
• ½ tsp cumin powder
• ½ tsp red chilli powder (optional)
• Salt, to taste
• ½ cup water (or as needed)
• 1 tsp lemon juice (optional)
1. In a blender, combine the yellow capsicum, paneer, and coriander root (or coriander stems and leaves). Blend until smooth. If needed, add 2–3 tablespoons of water to help it blend.
2. Heat 1½ tablespoons of oil in a pan over medium heat.
3. Add the chopped garlic and sauté for 30–60 seconds until fragrant. Do not let it brown too much.
4. Add the sliced mushrooms and cook for 4–5 minutes until they soften and release their moisture.
5. Add the turmeric, coriander powder, cumin powder, red chilli powder (if using), and salt. Stir well for about 30 seconds.
6. Pour in the blended paneer and capsicum mixture. Mix well and cook on low to medium heat for 5–7 minutes, stirring occasionally.
7. Add about ½ cup of water to adjust the consistency. Simmer for another 3–5 minutes until the gravy becomes smooth and creamy.
8. Taste and adjust the salt. Add the lemon juice at the end if you'd like a slight tang.
9. Serve hot with roti, naan, paratha, or steamed rice.
This is a unique, nutritious gravy that's naturally creamy
because the paneer creates a rich texture without needing cream.
