Ingredients

• 2 medium onions, roughly chopped

• 4 cloves garlic

• 2 tbsp fresh coriander leaves, chopped

• 10–12 fresh mint leaves

• 2 green chillies

• ½ tsp salt (or to taste)

• ½ cup milk (for blending)

• ½ cup milk (for cooking)

Method

1. Add the onions, garlic, coriander leaves, mint leaves, green chillies, salt, and ½ cup milk to a blender. Blend until you get a smooth paste.

2. Heat the butter in a non-stick pan over medium heat. Add the blended paste and cook for about 2 minutes, stirring continuously.

3. Pour in the remaining ½ cup milk and ½ cup water. Stir well and let the sauce come to a gentle simmer.

4. Carefully crack the eggs one at a time directly into the simmering sauce, leaving some space between them.

5. Cover the pan and cook for about 4–6 minutes, or until the egg whites are set while the yolks remain soft (or cook longer if you prefer firmer yolks).

6. Garnish with fresh coriander leaves and serve hot with steamed rice, chapati, roti, naan, or paratha.

Serving Suggestions

Serve hot with steamed rice, jeera rice, or Indian breads like roti, chapati, naan, or paratha. It also pairs well with a light salad or raita on the side.
